As I've probably mentioned I'll always aim to eat the local food when away. Thai and Cambodian cuisines share a lot of similarities though, being neighbours, and Cambodian restaurants frequently have Thai dishes on the menu too. As I've made this dish before, from this recipe, when I saw it on a menu in Phnom Penh I had to give it a go.
As the omelette in Cambodia tasted near identical to how I remember the Appon recipe I thought I'd write about it so others could try. Like most Thai dishes there's so much flavour - savoury eggs and pork, hot chili, salty fish sauce and the fragrant coriander. Looking at it now I think there may have been some really finely sliced raw green beans (snake beans probably, but green beans are a fine subsitute), like you get in Thai fishcakes, although I can't remember now.
When I first tried this a couple of years back I posted the recipe on the BBC food forum and it's become a favourite of quite a few folk - so give it a go.

That looks great and I'm so pleased you were able to have some over there. We're great fans of Appon's recipe which you posted on the BBC forum. It's a great picnic food and travels well - makes a great talking point too!
