I've wanted to try these ever since I read about them in Nigella's 'Nigella Bites'. I love eggs, I love coriander, I love chillies and I love cumin - add to that being pretty partial to chapatis and we're on to a winner. Bearing all that in mind you have to wonder why I took about 5 years before giving them a go. They're a breakfast dish but I ended up with them for lunch today.
The flavours work together really well, a nice combination of warm spices and fresher flavours from the pepper and onion - just be careful with the chilli as I put two in and they overpowered it a bit. You can make your own chapatis easy enough (I did back here ) but today I didn't bother, it was meant to be a quick meal.
Masala Omelettes, per person
2 eggs
1 spring onion
1/2 ts ground cumin
1/2 ts ground cinnamon
1/4 ts turmeric
1or 2 thin green chilies
A small amount (tablespoon maybe) of diced red pepper
1 clove garlic
1/2 cm slice of ginger
Fresh coriander to spread on top
Chapatis to serve, 2 per person
Method
Slice the spring onions and chilies. Beat the eggs with some salt and pepper. Finely chop the garlic and ginger.
Heat some oil in a pan and add the onion, red pepper, chili, ginger, garlic and turmeric, cook for maybe 30 seconds. Add the cumin and coriander and give 30 seconds more.
Add the eggs and swirld to coat the pan and distribute the other bits. Cook till set, finishing under the grill if needs be. I made the mistake of chucking the fresh coriander on before grilling and so it wilted, next time it will go on right at the end.
Serve with 2 warmed chapatis, some plain yoghurt or raita would be nice too.
I've spied these in Nigella Bites before now and thought they would be delicious. Thank you for reminding me about them. Looks delicious.

I had these almost every day when I was in India, cooked to order but as scrambled eggs rather than omelette. A great way to start the day.

How funny! It was Nigella Lawson that first introduced me to these lovely omelettes too! (though now I think about it...maybe it was Nigel Slater...) Anyway, they're delicious and I love them too!
